Chades Tapsilog in Sta. Cruz Manila has been a local favorite since the early 2000s. Even when the pandemic struck, this eatery has stood strong for more than 2 decades now. Despite its unassuming facade, this eatery holds a special place in the hearts of students and blue-collar workers. Blue-collar workers, typically employed in manual labor or trades, appreciate Chades Tapsilog for its hearty and affordable meals. It’s a go-to spot for those seeking a quick and delicious Filipino breakfast. Recently relocated to Remigio St., just a block away from its former location, Chades Tapsilog continues to serve its loyal patrons in the heart of Sta. Cruz. This diner is famous for its Silog dishes, a Filipino comfort food classic. Silog is a fusion of two Filipino words: “Sinangag” (garlic fried rice) and “Itlog” (fried egg). This combination creates a satisfying and simple meal that never goes out of style.
It is typically served with a choice of side dish such as hotdog, cured beef or tapa, longganisa, fried chicken, and a lot more. At Chades Tapsilog, you’ll find familiar condiments like Fish Sauce, Soy Sauce, Spiced Vinegar, and Banana Ketchup on every table. Just like the usual carinderia or eatery in the country. These staples allow you to customize your meal to your liking. As you wait for your order, they will serve a piping hot bowl of beef broth soup for free. One of its strengths is its speedy service. Even during peak hours, you won’t be kept waiting for long as they already cook batches of the Silog side dishes. Furthermore, they are open daily at 7:30 AM and close at 8:30 PM, making it a convenient choice for breakfast, lunch, or dinner. There were also other carinderias around the area.
My Experience
During our visit, I tried their signature Tapsilog. We got there around 8:30 AM, which was the perfect time for our breakfast. That morning, we chose to dine outdoors, making the most of the pleasant weather and the lively atmosphere of Sta. Cruz, Manila. The Chades Tapsilog staff assisted us promptly, setting up the tables and chairs with efficiency and a friendly attitude. Their quick help made our alfresco dining experience comfortable and enjoyable. We didn’t wait long for our order since there weren’t a lot of customers when we arrived. The soup they gave somehow reminds me of quick chow. But it was good. This dish features well-seasoned tapa, perfectly fried eggs, and aromatic garlic fried rice. The blend of sweet and salty flavors, especially when combined with vinegar, creates a delicious balance. My Filipino taste buds just approve of their Tapsilog. Just how we like it.
If you prefer a different taste, you can opt for Toyomansi, a blend of soy sauce and calamansi, although it tends to lean towards the saltier side. Chades Tapsilog doesn’t limit itself to Tapsilog alone. Their menu offers a variety of Silog choices to cater to diverse preferences. My friends opted for Chicksilog and Porksilog, and they were equally pleased with their flavorful and filling meals. We would definitely come back here and try the other silog dishes when we can!
